Ras malai is one of my all time favourite Indian sweet dish or dessert. And the best thing is that you can make this at home as well. I would not say its very easy to make but its quite doable if you follow the process correctly and use the ingredients in exact ratio demanded by recipe. Also cooking process of ras malai is very important. If you under cook it, rasmalai can break and if you over cook it, rasmalai can become hard. This recipe also shows how to make paneer.

Ingredients
For Saffron Milk
For Sugar Syrup
For Rabri(Milk Syrup)
Servings: 6 pieces
Instructions
  1. Boil 1 Litre Milk in a Pan.
  2. Add Vinegar in it and stir till it forms curdles.
  3. Strain the milk using Muslin Cloth.
  4. Add some cold water to cool it down.
  5. Remove all the water by squeezing.
  6. Flatten the Paneer using hands and place a heavy object on it. Leave it for 10-15 minutes.
  7. Take 1 Tablespoon milk.
  8. Add 8-10 strands of Saffron in it, and mix. Keep it aside.
  9. Take out Paneer(Chenna) from the muslin cloth.
  10. Grate the Paneer roughly to fill some air in it.
  11. Now use your hands to Knead the paneer into a smooth dough.
  12. Make small flatten balls by rolling Panner using hands.
  13. Add 4 cups of water in a Pressure Cooker or a deep Pan.
  14. Add 1 Cup Sugar in it and Boil.
  15. When it starts Boiling, Drop the Paneer(Chenna) balls in it. Keep on High.
  16. Put the lid on and remove the whistle.
  17. Keep on High for 8 mins.
  18. Remove the lid and check. If its done, take out the Paneer(chenna) balls.
  19. And cool it completely and dip it inside this syrup.
  20. For Rabri(Ras), Boil 3 cups of milk.
  21. Add 1 cardamom in it.
  22. Keep on stirring the milk till its volume reduces to half.
  23. Add 2 Tablespoon Sugar in it.
  24. Add Saffron Milk in it and stir.
  25. Add Pistachios and Almonds in it and stir.
  26. Remove it from the Stove.
  27. Now Squeeze out the extra syrup from the Paneer by applying slight pressure using your palms.
  28. Now its time to add Ras(Rabri) in it.
