Tomato soup is the most common soup that every indian restaurant serves. This soup is very healthy and full of vitamins. It provides good amount of fibres and its high in vitamin A, C and K. Tomato soup is also good if you want to lose weight. People in low carb and keto diet should eat tomato soup since its low in carbs and high in fibres.

Most restaurants use cornstarch or cornflour to thicken the soup. But in this recipe I have used rice to thicken it up. You can use cornflour as well.

Ingredients

Instructions
  1. Heat a pressure cooker and add butter to it.
  2. Add a bay leaf, peppercorns, ginger and garlic. Fry until golden brown.
  3. Add chopped onion to it. Saute until translucent.
  4. Now add carrots and roughly chopped tomatoes to it. Mix well.
  5. Add 2 Tbsp washed rice to it.
  6. Add 1-1/2 cup water to it. Close the lid of the cooker and cook for 2 whistles.
  7. When done, release the pressure from the cooker and open the lid.
  8. Blend it smooth using a hand blender. If you don't have hand blender, just let it cool and blend it in mixer.
  9. Now strain it through a strainer. Transfer the strained soup to a deep pan.
  10. Add 1 cup water, salt, chilli powder and sugar to it. Mix well. Boil for 5 minutes.
  11. Turn off the heat and transfer the hot soup to the serving bowl. Add some fresh cream to it. Bon Appetite!
