Chole masala

Ingredients

  • 1 cup chole/chickpea
  • 3 cups water
  • 1 tsp salt
  • 3 teabags
  • 1 cinnamon
  • 1 bay leaf
  • 1 black cardamom
  • 1 tsp oil
  • 1 tsp ghee
  • 1 tsp cumin seeds
  • 2 green chillies
  • 1 tbsp ginger garlic paste
  • 350 gram onion paste
  • 1/2 tsp salt
  • 300 gram tomatoes
  • 1 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • water
  • 1 tbsp fenugreek seeds
  • 1 tsp tamarind

Instructions

  • To prepare chole masala, first add chole water, salt, bayleafs, badi elaichi, teabags in a pressure cooker
  • mix it well and cover it and cook for 25 minutes
  • now add oil, ghee, cumin seeds, green chillies, in a pan
  • fry it for a minute
  • add ginger garlic paste and fry it
  • now add onion paste and mix it
  • cook until it becomes gray in colour
  • now add salt and tomatoes an mix it well
  • cover it and cook for 5 minutes
  • give it a mix
  • add turmeric, coriander powder, chili powder and garam masala, mix it well
  • again cover and cook for 2 minutes
  • now add the boiled chickpeas and mix it well
  • add water left from chickpea and add more water if required
  • mix it well and cover and cook for 2 minutes
  • add kasuri methi and tamarind pulp and mix it well
  • chole masala is ready
