Equipment

Ingredients

For Cake

  • ½ cup butter
  • ¾ cup sugar
  • 2 eggs
  • 1 ¾ cup all-purpose flour
  • 3 ½ tsp baking powder
  • a pinch salt
  • ½ cup milk
  • ½ tsp vanilla essence

For chocolate covering

  • 4 cups icing sugar
  • 1/3 cup cocoa powder
  • ½ cup milk warm
  • 2 tbsp butter melted

For garnish

  • coconut desiccated

Instructions

For cake

  • Take butter and sugar in a bowl. Beat it for 2 minutes using an electric beater.
  • Add eggs and beat again using beater
  • Sieve flour, baking powder, salt in the same bowl and combine using spatula
  • Add milk and vanilla essence and mix again using a beater.
  • Transfer the cake batter to an 8 x 8 greased cake tin and bake at 180oC/350oF for 25 to30 minutes.
  • Freeze the cake for 20 minutes

For chocolate sauce

  • In a bowl, add icing sugar, cocoa powder, warm milk and melted butter.
  • Mix everything using a whisk until it is combined and no lumps are formed.

Preparing lamingtons

  • Add the cake pieces one by one in the chocolate sauce to coat them completely.
  • Use a fork to take out the cake pieces from the chocolate.
  • Roll them in desiccated coconut and your lamingtons are now ready.
  • Serve and enjoy.
