Caramel kheer recipe

- 1½ litres Milk
- 1/2 cup Rice Broken; raw
- 3/4 cup Sugar
- 1/2 tsp Cardamom powder
- Water As required
In a pan, add 1 litre of milk and let it boil.
While it is boiling add half a cup of broken rice into that and let it cook.
The boiling of the milk condenses and reduces the amount of milk into the pan at 1/3rd.
To be precise, the kheer thickens.
Meanwhile, take a pan and add 3/4th cup of sugar to that.
Start heating the pan at medium flame. Slowly, it starts to melt. The colour of the sugar syrup starts turning red or brown.
Add the required amount of water to the caramelized solution and let it boil.
Now add the prepared caramel to the thickened kheer and give a final stir to cook.
Lastly, add 1/2 teaspoon of cardamom powder, cook for a few seconds and serve the caramel kheer in a bowl!
