mishti doi - mishti dahi

  • 1 1/4 cup sugar
  • 4 tbsp water
  • 1 1/2 litre milk
  • 1 1/2 cup hung curd


  • first take a 1/2 cup of sugar and 4 tbsp of water, boil it until it caramelises and turns brown
  • add 1/2 cup of milk and mix it well until no lumps formed
  • add 1 1/2 litre of milk, mix it well and let it boil for 15 minutes
  • add 3/4 cup of sugar, mix well and let it cool
  • now take 1 1/2 cup of hung curd and whisk it for few minutes
  • now add the lukewarm milk to it and mix it well
  • take a clay pot, pour the mixture to it.
  • cover it with aluminium foil and wrap it with the towel 
  • place it in a big vessel and close the lid
  • keep it in the lowest heat for 2 hours
  • turn off the heat and let it cool
  • take it out and your mishti doi is ready
