Ingredients
For the pasta dough

beetroot
boiled

whole wheat flour

For the sauce
1/2
beetroot
boiled

garlic cloves

salt

nutritional yeast

curd

Instructions
Making the Pasta Dough
Blend beetroot, whole wheat flour, salt, and oil in a food processor until crumbly.
transfer to a bowl and add water little by little while kneading into a dough.
Cover and refrigerate for 15 minutes.
Cooking the Pasta
Bring a pot of water to boil with a pinch of salt.
Cut the dough directly into the boiling water using scissors.
Let it boil for 10 minutes, stirring occasionally.
Drain and transfer to a bowl.
Preparing the Sauce
Blend beetroot, garlic, salt, nutritional yeast, and curd until smooth.
Adjust consistency with water if needed.
Mixing and Serving
Toss the pasta with the sauce.
Sprinkle black pepper and serve warm.
