Beetroot Pasta in Creamy Garlic Sauce

Ingredients

For the pasta dough

  • 1/2 beetroot boiled
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1/2 tsp oil
  • 2 tbsp water

For the sauce

  • 1/2 beetroot boiled
  • 2 garlic cloves
  • 1/2 tsp salt
  • 2 tbsp nutritional yeast
  • 1/2 cup curd
  • 1/2 tsp black pepper powder

Instructions

Making the Pasta Dough

  • Blend beetroot, whole wheat flour, salt, and oil in a food processor until crumbly.
  • transfer to a bowl and add water little by little while kneading into a dough.
  • Cover and refrigerate for 15 minutes.

Cooking the Pasta

  • Bring a pot of water to boil with a pinch of salt.
  • Cut the dough directly into the boiling water using scissors.
  • Let it boil for 10 minutes, stirring occasionally.
  • Drain and transfer to a bowl.

Preparing the Sauce

  • Blend beetroot, garlic, salt, nutritional yeast, and curd until smooth.
  • Adjust consistency with water if needed.

Mixing and Serving

  • Toss the pasta with the sauce.
  • Sprinkle black pepper and serve warm.
