take bowl and add maida/flour, salt, carom seeds and ghee
mix it well
add water and knead a little hard dough
cover it with wet cloth
leave it for 15 minutes
now add oil, cumin seeds, fennel seeds, crushed coriander seeds, green chillies and ginger paste.
fry it for a minute
add chilli powder, garam masala and dry mango powder
mix it well
add mashed potatoes
mix it well on medium heat
add salt and handful of coriander
mix it
now take prepared dough and knead a little
take a small portion and roll it
roll it thin
cut it in a square shape
add the filling
apply water all over the dough
roll it tightly up to half
use a knife and make cuts all over
roll it and join the ends
use a small piece of dough and seal it
drop it in hot oil on low heat
fry it on low heat until it comes up
now fry it on low medium heat until it turns golden brown
