Add cumin seeds/jeera to it. When it starts to crackle, add green chillies, ginger to it. Cook well. Now add mashed-boiled potatoes to it and mix well. Add amchoor/dry mango powder, salt and chopped coriander to it. Mix well. Turn off the gas and let it cool. Now take wheat flour/atta in a bowl. Add 1 tsp salt and 1 tsp oil to it. Mix well. Add 1 cup water. Knead the flour and form a soft dough. Take a small portion of dough, dust it with some flour and roll it a little. Put some of the prepared potato stuffing and seal it. Roll it round. (not very thin) Heat a pan or tawa. Apply some water on one side of the paratha. Now place the paratha on the tawa/pan. (wet portion on the tawa/pan) cook for 30 seconds then turn over the tawa/pan. And cook the paratha directly on the flame till you get the brown-black spots on the paratha. Take out the paratha when done. Apply butter/ghee on top and serve hot!
