Kaju Katli

Lets first decipher these words – ‘Kaju’ means cashew , ‘Katli’ means. This delicate ,sumptuous sweet is one of most consumable sweet in India. If you are visiting relatives ,or during marriage functions or something which you want to keep it for longer time to consume. This is one of the most likeable dish by Indians.

This sweet delicacy is a type of fudge or barfi, made by only 2 ingredients Kaju or cashew and Sugar. It use very less ingredient easy to make yet very special sweet dish that can be cooked within 15-20 min.

As India is getting ready for the Diwali – the festival of lights and Navratri – the festival of idols – this recipe can be included in fasting menu. This exotic dish can be served to guests and present as gift to your friend and family during festivals.

Kaju is main ingredient of this dish. Kaju is considered exotic fruits, grown in sub tropical region of india. Kaju’s mostly grown in Goa-India. Last week I happen to be there and managed to pick up some best cashew nuts. Kaju is very versatile fruit – my all time favourite snack. Kaju is an integral part of indian cuisine, whether it is Pulav or biryani , shahi panner or kaju curry, or any sweet dishes. It is mostly used as dry fruit.

Benefits of kaju or cashews –

Kaju is considered to be very high in fat, so if consume in moderate amount, it can benefitted for your body.Kaju is packed with vitamins, minerals, antioxidant. It is high in potassium, vitamin E and B6, also have moderate amount of folic acid.

  1. Kaju high in monounsaturated and polyunsaturated fats so it reduces risk of heart related disease.
  2. It also reduces blood pressure and bad cholesterol level.
  3. Having 2-3 kaju in a day can also help you to reduce weight, or faster the process of weight loss.
  4. Good for bones and oral health.
  5. Safe for diabetic because low sugar content and healthy fats.
  6. Boost immune system.
  7. Keep your eye healthy.

While having Kaju Katli – I never mind to add extra calories to my routine diet. You can make it more exotic by adding saffron in barfi. Saffron is one of the costliest spice.

Kaju katli is exotic very delicious dessert, richness and creaminess of kaju, cut in to diamond shape and decorate with silver work ,make it look luxurious.

Important Notes :-

  1. If you are using frozen kaju let it come to the room temperature before grinding.
  2. Sugar syrup should be of one string, if you cook for long time it can make kaju katli hard.
  3. Do not make mixture too thick else it make kaju kati hard.
  4. For decoration you can use silver work, easily available in sweet shop.
  5. You can store kaju kati on fridge and consume till 7-8 days.

Ingredients

  • 200 gram cashews
  • 1/2 cup sugar
  • 1/4 cup water
  • ghee

Instructions

  • To prepare delicious kaju barfi, first take cashews in blender and grind it fine
  • now in a pan ad water and sugar and boil it to one string consistency
  • now add prepared cashew powder and mix it well
  • cook on low medium heat until it comes together
  • apply ghee on a tray
  • add the cashew paste and roll t a little when its hot
  • cut it in desired shape
  • kaju katli is ready
