What is Vanilla Cupcake?

Vanilla cupcakes or also known as fairy cake or party cake in British English is an authentic American dessert recipe. It is a small cake decorated with cream icing or any other kind of caking decorations. Cupcakes are baked and served as a dessert. This vanilla cake recipe is also an eggless cake recipe, which is prepared using very basic baking ingredients. You can easily prepare this in your home for any occasions.

Variations of cupcakes

There are many variants of of cupcakes available which are unique in their own way. some times you may find that cakes are made in individual cups instead of baking tray, This procedure was used earlier days when still muffin tins were not yet introduced. you can also find that cupcakes are found in 1796 which is also written in American cookery. Nowadays there are many different designer style cupcake available but this home made cake recipe is something which you must add it your Kitchen book.

How to make Vanilla cupcake?

Preparing vanilla cupcakes is super easy, all you need is all purpose flour or plain flour, powdered sugar, oil or butter, yogurt and vanilla essence or vanilla extract. This is an eggless cupcake recipe so I have replaced eggs with yogurt. Instead of butter I prefer using oil in my recipes. You can use any unflavoured oil like vegetable oil to prepare this recipe. Always remember to use powdered sugar in this recipe as sugar granules can ruin the recipe. Also I recommend using vanilla extract rather than essence as the former gives better strong flavour of vanilla.

How to prepare frosting?

There are many variations of frosting when you prepare cupcakes. I prepare it with very basic frosting which is whipping cream frosting. For preparing whipping cream frosting you need a chilled whip cream, powdered sugar (sifted through a sifter) and vanilla essence. I prefer to place my whipping glass bowl inside the freezer for 15 minutes before whipping, this results in quick preparation. You should whip the cream using an electric beater or stand mixer, if you don’t have any of that the hand whisker works fine as well. Now whip the cream by adding sifted powdered sugar in batches. whip it until stiff peaks formed. Do not over beat it or under beat it.

Important points

  1. mix all the ingredients properly make sure there are no lumps.
  2. do not over bake. You must take cupcakes when they are still soft.
  3. whip the whipping cream until stiff peaks formed. Do not over beat it.
  4. always sift the powdered sugar through a sifter while preparing the icing.

Ingredients

  • 3/4 cup yogurt
  • 2/3 cup powdered sugar
  • 2/3 cup oil
  • 1 cup flour/maida
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch salt
  • 1 tsp vanilla essence
  • 2 tbsp water

For cream

  • 2 cups whipping cream
  • 1 cup powdered sugar
  • 1 tsp vanilla essence
  • sugar sprinkles

Instructions

  • First take a bowl and add curd and powdered sugar
  • Mix it well
  • now add oil, flour/maida, baking powder, baking soda and salt and mix it well
  • add vanilla essence and water
  • mix it well until you get creamy texture
  • add it to the baking tray
  • bake at 180°C/356°F for 15-17 minutes

For cream

  • Add whipping cream in a bowl
  • use chilled whipping cream and bowl
  • beat it until stiff peaks formed
  • add powdered sugar and vanilla essence
  • whip until stiff peaks formed
  • take a piping bag with star nozzle
  • add the prepared cream
  • apply it on the top of baked cake
  • add soe sugar sprinkles
  • vanilla cupcakes are ready
